My kids love ice cream,
If they can have it for dessert all the time they never get bored.
I have contemplated about getting an ice cream machine a few times but the bulky size of ice cream makers puts me off.
I like to have a place for everything in our home and not have appliances on our worktops when they are not in use, and we don’t have the space in our cupboards for one so I messed around with trying to make some without a machine and we all were very impressed (“,)
I started off with vanilla ice cream and it went down well.
It was thick, creamy and luxurious!
I was so surprised it tasted like top quality expensive ice cream and I made it by hand,with 5 ingredients and it was ready in about 4 hours.
Because it came out so perfect, I wanted to try another flavour and I had to go with peanut butter.
Why, peanut butter you ask?
I was talking with my Husband about the different flavours of ice cream we have tried and what our favourites were and we both remembered snickers ice cream and how delicious the peanut butter in it is, and then we realised we haven’t ever seen peanut butter ice cream in the shops so off I went and experimented…..
I used smooth peanut butter because I wanted to add peanuts in it too for a crunchy element. I know I could of used crunchy peanut butter but,
- I like to toast my nuts before I add them to my ice cream base because it brings out a more nutty flavour
- The peanuts in crunchy peanut butter are all the same size and I like to have different sizes, so with each spoonful you get a different textural experience (“,)
The only thing you have to do, which can be a bit annoying if you are trying to relax is set a timer for 30 minutes, and when it beeps you go and get your ice cream out and give it a good stir with a fork making sure to get all the edges and corners of your bowl to stop any ice crystals forming, because we want a silky smooth ice cream.
This is such an easy step and a great one for kids to do and get them involved in the kitchen. Let them set the timer and do all the stirring for the next few hours and they will feel so proud that they created such delicious ice cream (“,)
Ingredients
- 300ml whole milk
- 160g sugar
- 500ml double cream
- Pinch of salt
- A teaspoon of vanilla
- 300ml whole milk

- 125g smooth peanut butter
- 125g peanuts
- Stand mixer
- Freezer proof container
- Spoon
- Pan
- Fork
Instructions
- Add your milk and sugar to a stand mixer and beat for 1 minute
- Add your cream, salt and vanilla and beat until combined
- Add your mixture to a freezer proof dish, cover and put in the freezer
- Set timer for 30 minutes and when it beeps take your ice cream out and stir it well with a fork making sure to get all the sides and base of your dish to stop any ice crystals forming
- Repeat setting the timer for 30 minutes and stirring when it beeps for the next 4 hours or when your ice cream has set like ice cream
- Add your milk and sugar to a stand mixer and beat for 1 minute
- Add your cream, salt and peanut butter and beat until combined
- In a dry pan heat your peanuts for a few minutes so they become nice and golden
- Add your mixture to a freezer proof dish and your toasted nuts, stir everything well, cover and put in the freezer
- Set timer for 30 minutes and when it beeps take your ice cream out and stir it well with a fork making sure to get all the sides and base of your dish to stop any ice crystals forming
- Repeat setting the timer for 30 minutes and stirring when it beeps for the next 4 hours or when your ice cream has set like ice cream
Notes
I have found that my ice cream sets a lot faster in a metal tin than a glass container. A loaf tin is the perfect size for this recipe
