Every year from May to September we have at least 2 large watermelons a week so I have to get a little creative and come up with some delicious tasting things to do with it so we don’t get bored.
Don’t get me wrong we never get bored of eating watermelon as it is, we just have too much sometimes and want to try different things….
Like…..

Watermelon slushy sorbet is a great dessert on a hot summer evening
Watermelon glyko, glyko karpouzi or watermelon spoon sweet, this recipe uses up your watermelon rind so there is zero waste, the only thing I do differently is I don’t use asveti/pickling lime, because I personally don’t want that kind of calcium in my body so I don’t add it to my glyko which means my spoon sweet isn’t as crunchy as the traditional ones but I don’t mind, I just cook it for a little less time

Ingredients
- 1 big slice of watermelon at least 2cm thick
- 2 kiwis, sliced
- 2 nectarines, sliced
- A good handful of raspberries
- A good handful of blueberries
- 400g watermelon, cubed
- 1 yellow pepper, diced
- 1 red onion, diced
- 1/2 - 1 chilli, sliced (it depends how hot you want to have it)
- 1 handful of coriander
- Juice of 1-2 limes (check to see if you need more after 1 lime, because some limes are juicer than others
- 300ml pureed watermelon
- 2/4 raspberries per lolly
- 500ml water
- 2 handfuls watermelon
- 1 handful strawberries
- Splash rose water
- 10 mint leaves
- 2 handfuls watermelon, cut into chunks
- 1 handful strawberries, sliced
- 1 handful rocket
- Drizzle balsamic vinegar
- Watermelon cut into hold able triangles with the rind kept on
- Small wooden skewers
- Optional - ice and lime to serve them on
- 1000g watermelon
- Juice of a lemon or lime
- 100g sugar
- Watermelon (as much as you want)
- Melon (as much as you want)
- Halloumi
- Pitta, toasted (as much as you want)
- Watermelon slice a few cms thick
- Water or juice
- Red grapes
- Blueberries
- Green grapes
- Melon
- Satsumas
- Watermelon, cut into bite sized pieces
- Wooden skewers
- 1kg watermelon rind
- 1kg sugar
- Juice of 3 lemons
- Zest of 3 lemons
- 1000ml water
- Optional 1 teaspoon of vanilla
- Watermelon cut into cubes
- Feta cut into cubes
- Kiwi cut into cubes
- 2 gelatine sheets
- 125ml watermelon juice
- 1 teaspoon sugar
- Watermelon
Instructions
- Cut your watermelon slice into 8 even triangles
- Add your kiwi, nectarines, raspberries and blueberries to your watermelon and decorate it to your liking (",)
- To a bowl add all your ingredients and give it a good stir
- Have a taste to see if the chilli and lime is to your liking, if not add more and then enjoy (",) This is delicious served on it's own or as a side accompanying some delicious grilled meat or fish, some fluffy rice and a few vegetables
- Add a few raspberries to each lolly mould
- Add your pureed watermelon to each mould and put your lids on and place them in the freezer to set
- Once frozen take them out and enjoy this healthy refreshing treat (",)
- Put all ingredients into a blender and blitz until smooth
- Pour into kilner/ mason jar (fills 1 1/2 jars)
- Serve with a few strawberries or a whole box he he ....
- Add your watermelon, strawberries and rocket to a bowl and toss everything together
- Drizzle over a little balsamic vinegar and stir everything so it is all coated well
- Then dig in (",) Make sure you get a piece of everything on your fork so you can taste all the textures and flavours together, they are awesome!
- Get your wooden skewer and screw it into your watermelon skin. This is so simple but this little bit of effort of adding the skewer makes eating the watermelon more special
- Serving suggestion - Serve on ice with a few lime slices, to make the watermelon really cold like an ice lolly and the lime makes the watermelon taste even better
- Add all your ingredients to a blender and blend until smooth
- Now pour your watermelon juice through a sieve to catch the seeds and pulp then use the back of a spoon to get as much juice out as possible
- Pour your juice into a shallow freezer proof container, cover with cling film and put in the freezer for 1 hour
- After an hour use a fork to break up any ice then cover again with cling film and place it back in the freezer for 2 hours
- Keep repeating this process every 2 hours until your watermelon is all slushery (check the video below to see the right consistency)
- When it is all shushery, store it in the freezer until you want to eat it
- Serving suggestion - add your sorbet to a bowl and eat it or add it to an ice cream scoop if you want to be fancy and have watermelon domes. Which ever serving suggestion you choose add a slice of lime or lemon (which ever you chose to add to your sorbet) on the side to accentuate the sour flavour
- Add all your ingredients to a plate or tray and dig in (",)
- Cut your watermelon into cubes or rectangles, or use a cookie cutter or piping tip for different shapes
- Put them on a tray lined with baking paper and place them in the freezer for 2 hours to freeze
- When they have frozen place then in a freezer proof container separating each layer with baking paper so they don't stick together and loose their shapes. Then store them in the freezer until you want to pimp up your drink
- When you want to pimp up your drink, just add them to a jar, add your water or juice and enjoy (",)
- Add your fruit to your skewer starting from your red grape and finishing with your watermelon to create a healthy rainbow
- Cut any pink flesh and peel the green skin off of your rind then cut then into smaller pieces
- Add your rind to a bowl and cover with cold water and the juice of 1 lemon, then place a plate ontop to keep your rind under the water and leave to soak for 1 hour
- After an hour pour the water out and rinse your rind, then add it back to your bowl with more cold water and the juice of 2 lemons and place a plate on top to keep it all under the water and leave to soak for 20 minutes
- After 20 minutes rinse your rind under cold water and start on your syrup
- In a large pot add your sugar and water and heat until your sugar dissolves
- Then add in your watermelon rind, lemon zest and vanilla if using and simmer with the lid on until your rind becomes transparent, around 1 hour
- Then add your watermelon rind to a sterilised jar and store in the fridge
- Serving suggestion - In Cyprus it is traditionally served with a glass of cold water to balance out the sweetness
- Build a cube with your watermelon, feta and kiwi that's 3x3x3 9 (watch the video below)
- Add your gelatine sheets to some cold water and leave them to soak for 5 minutes
- Mash your watermelon with a for to get as much juice out as possible then pass it through a sieve
- Add your watermelon juice and sugar to a pan and heat until it's just about to boil then take it off of the heat and add in your gelatine and stir until it has melted
- Add your juice to your moulds and then put them in the fridge to set
- When they have set store them in a container and enjoy whenever you want a tasty treat (",)
